Diciamo la verità, quante volte ti è capitato di pensare “ma ne vale davvero la pena?”.

E magari quando hai aperto il locale, le referenze erano 4, al massimo 5! Oggi hai: la brioche alla marmellata, quella alla crema, quella alla crema di nocciola; poi hai le treccine, mela, frutti di bosco, cosa fai, quella non la metti? Che poi il bar vicino a te ce l’ha sicuramente! E poi i muffins, le brioches integrali e quelle al miele, quelle vegane (che adesso vanno di moda) e poi le brioches al cioccolato, i saccottini e le crostate.
Insomma se conti tutte le referenze arrivi a 15 cartoni! E quanto spazio ti prendono?
Tutto sto casino e le devi ancora cuocere! Allora inizi ad accendere il forno, consapevole del fatto che ogni prodotto richiede tempi e temperature diverse di cottura, quindi inizi ad informare le brioches che ci mettono di più, imposti il timer e intanto che cuociono ti metti a fare un’altra cosa, ti distrai un attimo e quando arrivi le trovi abbronzate più del solito e sai già che qualcuno non le comprerà. Ma ammettilo dai, anche a te qualche volta è venuta la tentazione di impostare una temperatura ed un tempo medio di cottura per tutte le brioches. Il risultato? Qualcuna ben cotta, qualche altra un pò più colorata, qualche altra ancora un pò pallidina, molle, in una parola: cruda!
Che se poi te la comprano, devi sperare che la digeriscano!
E vogliamo parlare di quando arrivi a metà mattina ed hai finito la brioche con la farcitura che richiedono di più? Ti trovi costretto a riaccendere il forno, perché se non ce l’hai tu, quasi certamente il tuo concorrente ce l’avrà! Ed ecco che parte il toto-brioches! Quante ne preparo? Altre 10? Ma ha senso accendere il forno per 10 brioches? No, dai ne metto 15! E se poi mi avanzano?
La verità è che preparare le colazioni richiede molto lavoro e nonostante la crisi, la colazione rimane ancora oggi una delle abitudini più remunerative (il 36% dell’incasso giornaliero) per chi come te ha un bar.

Voglio raccontarti la storia di: Eddy e Marco una caffetteria nel centro di Lissone (MB) una realtà immersa ad altri bar. Quindi immagina, concorrenza spietata, tutti con gli stessi prodotti (ormai le brioches che si trovano nei bar le trovi anche nei supermercati!). Tutti con lo stesso prezzo, che se solo ti venisse in mente di aumentare anche solo di 10 centesimi la stessa brioche, rischieresti di trovarti il bar vuoto da un momento all’altro!
Vendevano circa 600 brioches a settimana, “ottimo numero!” penserà qualcuno. Ma a lui non bastava! Sapeva che distinguendosi avrebbe venduto molto di più, e perchè no? Avrebbe potuto anche aumentare il prezzo!
E così siamo arrivati noi e solo nel primo mese le sue vendite sono schizzate da 600 a più di 800! Senza considerare i caffè e i cappuccini ordinati insieme ad ogni brioche!!
